We had some pancake fun yesterday cooking a batch of our favourite American Style Pancakes. I turn to one of my favourite chefs for the recipe, Mr Jamie Oliver. I made a batch of 12 and they were about 5 inches across so you could cook two at a time. These are light and fluffy and cook quite thick. In fact they taste like flat cakes! - 5 large free-range eggs
- 195 g plain flour
- 1 1/2 heaped teaspoon baking powder
- 225 ml milk
- 1 pinch salt
Firstly you need to separate the yolks from the egg whites. I do this by cracking the egg in half and tipping the yolk from one half of the shell to the other. The whites will fall out (into a bowl underneath!). Keep tipping from one half of egg shell to other until the white is all out.
Firstly mix up the egg yolks, flour, baking powder and milk in a big bowl. And then in a separate bowl mix up the egg whites and salt for what will feel like ages until you can tip the bowl and the whites stay put, or form stiff peaks for a proper cooking term.
Add the whites to the yolk mixture and fold without knocking out too much of the air.
Using a ladle spoon enough to make a 5-6 inch round pancake in a frying pan with some melted butter. I could fit 2 in my pan as I had 3 hungry boys waiting for their pancakes. Cook for around 2 min, then flip over. You’ll know when its ready to flip as there will be lots of bubbles appearing on the surface. The other side will cook quicker, maybe 1 min. Check that its golden brown and its ready to serve straight away.
For the toppings, well anything goes, use whatever you have in the cupboards! We had strawberries, lemon, sugar, toffee sauce and nutella! Josh decided to go for all 5 toppings together. Dylan was more reserved with just strawberries and toffee!
