The Best Chocolate Muffin Recipe

I needed a chocolate fix at the weekend and had already been out for my daily walk. Disaster in these times, written when living in isolation. I rummaged through the cupboard to see what I could find. Cocoa powder and chocolate spread. Which gave me an idea, maybe I could make chocolate fairy cakes or muffins.

I found a recipe online that wasn’t too complicated, but I had to substitute a few ingredients. All substitutions worked wonderfully along with an added extra bit of excitement of a creative boost from me. Here is the best chocolate muffin recipe, adapted by me!

You will need 2 mixing bowls, scales, wooden spoon, table spoon an a tea spoon. Plus a muffin tin and muffin cases, although I used my silicone cupcake cases and a cupcake baking tin.

This is a very simple recipe that you and or your children can easily make and it takes very little time to mix everything together and bake.

Ingredients

To make 12 muffins (although as you will see form pictures I actually made 9 very large muffins, as have lost 3 of my silicone cases).

  • 250g self-raising flour
  • 50g cocoa powder
  • 2 large eggs
  • 120g caster sugar
  • 4 tbsp olive oil
  • 200ml milk
  • Chocolate Spread

Method

Preheat the Oven to 180C/160C fan/gas 4

1 – Combine the dry ingredients, so weigh out and sieve the flour and cocoa powder into a bowl.

2 – Combine the wet ingredients, so the eggs, olive oil and milk plus the sugar in a separate bowl.

3 – Combine the wet with the dry ingredients together. As there is no butter it and the flour has been sieved there will be no lumps.

4 – Add a tablespoon of mixture to each muffin case.

5 – Add a teaspoon of chocolate spread on top of the muffin mixture

6 – Add another teaspoon of mixture to cover the chocolate spread.

7 – Bake for 20 to 25 minutes. To check pierce with a skewer or sharp knife. If it comes out clean of mixture the muffins are baked.

8 – Remove from baking tray and leave to cool. But they are best enjoyed when warm with the chocolate spread oozing from the middle.

These kept well in an air tight container for three days, they were delicious warmed up for 20 seconds in the microwave.

  1. I think it’s insanely delicious. I love the various chocolate puddings and cupcakes. My husband’s birthday is September first, and I’m thinking of a sweet present for him. I’m not very good at baking, because now I’m more inclined to shopping for a birthday cake online. I sincerely envy those who do it well 🙂
