Every year I make a hamper of treats for my family, and fill it with beauty goodies, books, pretty things, shells, things that I think are cute. I collect these things throughout the year for this purpose, some of the item are re-gifted and some things are products I have been sent to try. I also love to make something. This year I have made caramelised red onion chutney. This recipe made three jars of super tasty sweet chutney for 55p per jar.
This recipe is created and developed by me using my usual winging-it style of cooking, but the end result was super sweet chutney that tasted amazing with the Christmas ham and cheese. I saved a jar for me and tried it with cheese last night!
Ingredients (Priced using Aldi prices 14th Dec 2022)
9 red onions 50p
100g caster sugar 14p
100g prunes 51p
50g raisins & cranberries 19p
100ml white wine vinegar 23p
25ml balsamic vinegar 8p
Total £1.65 making 3 jars of chutney at 55p each
Method
Cut up onion, it fine as chunky bits, pop into saucepan with the caster sugar and cook for 10 minutes with lid on.
Add the chopped up prunes, raisins and cranberries plus the white wine vinegar and balsamic vinegar and cook with lid off until the liquid has reduced and the chutney mixture is sticky.
I have been saving jars, so boiled these in saucepan of water for 20 minutes to sterilise, then popped the mixture into the jar and sealed tightly. Adding a label and festive tissue paper and ribbon.
